More Italian than Chinese - kids love it. I don't know where the name comes from, but it's a New England favourite.

Ingredients

Method

  1. Cook the onion and capsicum over medium heat, stirring regularly until the vegetables soften.
  2. Stir in the garlic and cook for another 30 seconds.
  3. Add the beef mince and cook over medium-high heat, breaking up any lumps, until brown.
  4. Drain off any excess fat.
  5. Add the tomatoes and their liquid to the meat mixture.
  6. Stir in the tomato paste, oregano, chilli flakes, salt and black pepper.
  7. Bring the mixture to a boil.
  8. Cover the pan and simmer.
  9. Cook macaroni according to packet directions.
  10. Drain the pasta and add to the meat sauce. Add some water if the mixture is too dry.
  11. Before serving sprinkle with parmesan cheese.

Some say this is even better the next day.
