American Chop Suey

More Italian than Chinese - kids love it. I don't know where the name comes from, but it's a New England favourite.
Ingredients
- 2 tbs olive oil
- 1 onion chopped
- 1 green capsicum chopped large
- 2 garlic clove minced
- 1 kg beef mince
- 800 g canned diced tomato
- 2 tbs tomato paste
- 1 tsp dried oregano
- 1 tsp chilli flakes
- 1 salt and pepper *to taste
- 500 g macaroni
- 1 cup parmesan fresh grated
Method
- Cook the onion and capsicum over medium heat, stirring regularly until the vegetables soften.
- Stir in the garlic and cook for another 30 seconds.
- Add the beef mince and cook over medium-high heat, breaking up any lumps, until brown.
- Drain off any excess fat.
- Add the tomatoes and their liquid to the meat mixture.
- Stir in the tomato paste, oregano, chilli flakes, salt and black pepper.
- Bring the mixture to a boil.
- Cover the pan and simmer.
- Cook macaroni according to packet directions.
- Drain the pasta and add to the meat sauce. Add some water if the mixture is too dry.
- Before serving sprinkle with parmesan cheese.
