Caramel Oat Slice

A different take on traditional caramel slice.
Ingredients
- 125 g butter
- 1/2 cup sugar
- 1 tsp vanilla essence
- 1 cup plain flour
- 1 cup desiccated coconut
Filling
- 60 g butter
- 410 g condensed milk
- 2 tbs golden syrup
Topping
- 1 cup coconut
- 1/2 cup rolled oats
- 60 g butter
- 1 tbs golden syrup
Method
- Base: Cream butter, sugar and vanilla until light and creamy.
- Add sifted flour and coconut and mix well.
- Press evenly into a greased lamington tin.
- Bake in moderate oven for 20 minutes.
- Remove and cool slightly.
- Filling: Place all ingredients in a saucepan, and stir over low heat until butter melts. Increase heat, simmer gently, stirring continuously for 5 minutes or until mixture turns a light golden brown.
- Remove from heat and spread over base.
- Topping: Combine coconut and rolled oats in bowl.
- Place butter with golden syrup in small saucepan, stir over low heat until butter has melted.
- Add to coconut mixture and mix well.
- Sprinkle topping evenly over caramel filling
- Return to oven and bake for 15-20 minutes, until golden brown.
- Remove from oven and allow to cool before slicing.
Notes
The caramel can be made in the microwave, using a microwave safe bowl. Just simply cook on high setting for short bursts of 30 seconds until it has thickened and become a caramel consistency. You can also melt the butter and golden syrup in the topping stage in the microwave, saving you time
